I have some downtime while I repair one of my machines, and I thought I'd get a head-start on some roasting so that when the part and a second grinder come in I can hit the ground running with some roasted, cracked, winnowed nibs ready to go. How long would you keep your roasted nibs for before grinding? A week? A month? 24 hours?
