???I was making white chocolate for the kids for the first time(as i like dark and milk best! but the kids like white!) Everything was going fine then i noticed My white chocolate was getting a bit grey, after around five hours running! as i looked closer i could see greasy grey streaks in the white butter! Not large amounts you had to get really close to see it. I took out butter cleaned machine and rollers Took rollers apart found a little bit of grey hidden there but Cant find where it is coming from! or what it is Please Help got me puzzled!! is from the Granite?? or bearings (but i cant see how its getting in! One thing i do know is you wouldn't notice it unless you where making white and not dark Chocolate! Has anybody else had this problem!! what can i do???

It sounds like it was residual in the rollers. I have had that happen also if I forget to take the rollers apart before a batch of white chocolate. Have you put it back together and tried it again? I suspect if you have not, you have fixed the problem by cleaning it.

sweettooth, I cleaned my santa and then unscrewed the "axles" and inspected them and the interior of the granite grinders. Whoaaa! Lots of stuff in the wheels between the plastic bearings. A toothbrush was employed to remove the crud, it cleaned the annular space nicely - I used a tiny amount of dish detergent then rinsed the axles and the wheels thoroughly. Now I follow that procedure every time I clean the Santha. I am about to make my first batch of dark chocolate with white later so soon I will find out if I am being as thorough as I think I am.

I had the exact same thing happen the first time I ran white chocolate through my Santha, too (it looked more like joint compound or putty). There was just a LOT of residual granite dust. Alchemist sagely advised me to just run a couple cups of plain sugar through it for an hour or so, and that did a pretty good job of cleaning it out. I imagine that baking soda would work as well, too, but at least any residual sugar won't change the flavor of your chocolate (salty chocolate would be NASTY!
