I'm very new to this and have made two batches to date. In terms of total volume, I have put 104 ounces of ingredients in my first batch and 112 ounces in my second. I've noticed the Santha heating up so much I couldn't comfortably hold it without a potholder.
I never actually measured the temperature, but I'm guessing it was pretty hot. Is there any rule of thumb for total batch size in terms of heat generation or wear and tear on the Santha?

One more thing on heat generation in case recipe matters. My first batch was 23% cocoa liquer, 15% cocoa butter, 15% high fat cocoa powder, 15% nonfat milk powder, 31% sugar. My guess to total fat content is 29%. My second batch was 52% cocoa liquer, 3% clarified butter, 17% nonfat milk powder, 28% sugar. My guess to total fat content is 30%.

No, there is no rule of thumb, but I wouldn't be worried. My Santha drum is consistently hot enough that I have to use pot holders. One thing that you do want to keep in mind is that the max temp for the sealant between the drum and the granite base is something like 160-165F. However, I've never seen the temperature of the chocolate get anywhere close to that high, so again, I wouldn't worry about it.
