I have the following picture (link bellow) of the same cut after natural drying (not under sun). The smell is very, very soft and resembles wood and chocolate. I had problems during fermentation regarding temperature and dreinage. Well, it did not work. During roasting it developed a smell of ? roasted wood?! Terrible! I tryed to crush them in the mortar but it is impossible to smell... well, back to fermentation...

Well, today I've finished the second fermentation attempt. Now with close control of temperature and good drainage. Original pulp, without any modification. Tried to follow as close as possible the natural fermentation. The final smell is very different now. In the first attempt it ended quite acetic, now it resembles a kind of wine, very nice. I've cut 3 beans and all look like the same, see bellow. Nice color, dark ring near the skin, clear compartimentalization. Oh mine!! The flavor is getting better and better as the grinding evolves. I'm amazed with the quality it is going to reach, and at home! Thank you Alchemist, for this website and all the tips I've read here!
