Does anyone know what might cause this? At first I thought I had over roasted the beans, but when I tried a few of the raw beans, I realised one or two in every handful seemed like it has been over roasted, very crunchy rather than soft and ash tasting. So I have a sack of 70kg of beans (Not from Chocolate Alchemy) that seems like they are unusable right now, unless this is a normal thing and that flavour dissipates?

I've not encountered this in the beans I've used or tested.

That's probably due to a fault in drying. The beans could have been directly subjected to flames in its drying process, or subjected to fumes or smoke in its drying or storage. This is usually considered a fault.

I thought it could be something like that, I think I'll contact the people who sold it to me (ages ago, way too late for a refund) and see if they've had any feedback from other buyers. I think at worst I can probably make use of them by mixing in with others in my milk chocolate. On the other hand the chocolate it makes does seem to have an interesting note of vegemite
