You can buy the Santha Wet Grinder with the extra vent holes right here on this website. If you want the larger motor and cooling fan (recommended if you are making chocolate more than once or twice per month), then that is something you will have to change yourself.

Modified as stated in the website www.chocolatealchemy.com/conchingrefining.phpthe cover. but since u mentioned even better modifications. can i ask what is currently the best modifications in terms of every aspect. e.g. extra vent holes. modifications that wouldn't require making changes myself. if the only way to get the other modifications like motor etc by changing myself, can you post me the link? Just to be clear, Chocolate Alchemy does not recommend or not recommend the motor and fan change. I run my vent modified Santha way more than twice a month (as do a number of my customers) and it is doing fine. Just FYI. But, yes, you can get the Santha here . FYI, we are down to 1 until the mid part of June.

I run my vent modified Santha way more than twice a month (as do a number of my customers) and it is doing fine When I ran my modified Santha, it felt warm to touch, so I ran a fan over the motor during the 60 hours it conched/refined. Are you saying that this is not necessary?

It may not be necessary, but my theory is that the cooler the motor is the better. I'd rather play things safe like you are doing, even if it isn't really necessary. C-L

From extensive research and discussion with some mechanical engineers (co-workers), warm to the touch is perfectly fine. Hot to the touch is not. If you can put your hand on it indefinately, don't worry about it.
That is my take and experience. You should not need to run a fan over it.
The ONLY motor failure so far was with Brad's and his was completely my fault, not Santha's. I made a mistake and sent a modified cover that did not allow adequate ventilation. The covers as supplied by Santha now are fully adequate.

John;
Having now taken the Santha apart and completely rebuilt it from the ground up, I can say with 100% conviction that the problem was NOT your fault.
1. I run the Santha WAAAY more than the average person. Up until recently, my machine ran an average of 5 days per week, 24 hours per day. 2. I pushed the stock motor far beyond what it was intended for, often bypassing the Champion juicer and dumping the nibs directly into the machine. (My rebuilt one chews through that stage quite readily now!). 3. The belt was not tight when I bought it, and caused the bin to stall often. The motor continued to turn, and in turn burned the belt. 4. The cooling fan (an obvious afterthought in manufacturing) was lop-sided and caused the bushings in the motor to wear unevenly and eventually after creating a pile of graphite dust on my counter under the machine, the thing began to smoke, gave off a real unpleasant odor, and sat there humming before I could get there and unplug it.
In a nutshell, I got a dud. It happens. I fixed it, and now it's better than new.
With regard to heat, I've had occasion to do significant research into ambient operating temperature of AC motors (the stock Santha motor is AC). Average operating temperature is 37 to 40 degrees Celcius. My stock motor ran at that, and so does my new 3rd party motor.
Keep in mind, the larger the batch of chocolate you make, the more load will be on the motor, and the more heat it will create, and to be honest, I didn't see any type of thermal protection in the old motor before I tossed it, and it certainly didn't DEMONSTRATE thermal protection as it was dying on my kitchen counter in a puff of smoke.

For some fun home use, Yes. For now.
If I were doing more than one batch per week, I'd keep the stock cover, and immediately replace the motor and add a cooling fan.

I am about to purchase a COSMOS, 7 liter-rated wet grinder, 80rpm, sounds very similar to the smaller Santha, with granite rollers. This will cost me, shipped from Atlanta almost 1200 bucks. The 7 liter is minimum capacity, so I am hoping to be able to make 20 lb batches. Any comments would be welcome-- especially if you have reason to think this is a dud-- soon direct to me jhepler(at)twlakesdotnet since I may not get back to this site, and was not sure where to post this comment in the first place.
And Hats Off to the Alchemist, who has really blazed a trail and shared unique and valuable info with all of us. Thanks

I was thinking about buying a 5L Santha so am interested to know more about the Cosmos grinders - I see from a quick Google that they go all the way up to a 20L grinder but I can't find the manufacturers website so was wondering if you have it?

Rik-- This Cosmos is direct gear drive, but somehow has some changeable pulley in it (I'm waiting on the photos). Best immediate place I've found try info@innoconcepts.com
