I am a beginner chocolate maker, and I have tried a few recipes for milk chocolate using my melanger. After hours and hours of digging, I can only find about 5 total milk chocolate recipes, and I have made all 5, but none of them are right in my opinion. Sometimes the texture is perfect, but the taste is bad, or the other way around. What is your percentage of ingredients in your milk chocolate? Every opinion is appreciated, and if I have time within the 2 weeks where I am expected to sell some at a show, I will try to make them all in small batches to taste test them. Thank you so much!
