Hello Alchemist! I recently purchased a Santha 11 from you (like a week or two ago). I think you are the best person to anwer this question. The Santha 11 says in the instruction booklet that unroasted nuts are not ok. Why is that? I'm assuming roasted nuts are ok? How about coconut sugar? Or should i stick to regular cane sugar? The last thing I want to do is break that machine!! Thanks

Unroasted nuts will have much higher moistures, and have not undergone a microbiological kill step. The higher moistures will create a very viscous product that will likely burn seize your motor. The lack of a kill step may seize you.
