I am going to try to make a milk chocolate candy bar with a caramel filling and I'm not sure how i would do that.

I've made chocolate bars filled with dulce de leche using molds just like one would with molded truffles. Fill the mold with chocolate. Dump it out to leave a shell. Let it harden. Fill with caramel. Let it harden. Cover the caramel with chocolate and then let it harden. Remove the bars from the mold. That's the short version for this method.

I'm new to this forum. Is it okay to jump in with my advice?
I use sweetened condensed milk. I heat it until it becomes thick caramel. Then I pour a layer of chocolate into a bar mould and let it set. If the caramel is thick enough, you can pinch it between your fingers and thumbs make blobs to go in each cell. Then cover with the remaining chocolate.

The sweetened condensed milk you described is also called dulce de leche'

Caramalised sweetened condensed milk is a type of dulce de leche, isn't it? You can make it in a variety of ways. This is my favourite.
