Wassup yall! The Chocochemist of America is back! i have a question for yall: is it possible for one to refine the cacao beans in a metate(grinding stone) and then transfer the cacao solids to a Melanger? thanks!

It seems like it would work, but it also looks like it involves back breaking labor. I'd try to automate as much of the process as you can. I guess it all depends on how much you're trying to make.

i see what you mean but i dont know... i guess i like that feeling of hands on work but the backbreaking part is true! its a real pain but so worth it in the end!
