I was wondering where online or any where i can get WHOLE milk powder! If you know a local place or a online store, give me it's web address or it's phone number. My Milk chocolate turned out less creamy and too dark because i used Non fat dry milk. [glow=red,2,300]Thanks![/glow]

Locally, depending on where you are, you could try a Mexican or International grocery. Non-US countries tend to use more whole fat dried milk, and the Nido brand is fairly common. Personally, I recently bought some from www.barryfarm.com/milk.htm, but I wasn't very happy with the taste. By contrast, the organic line from Humboldt Creamery is very good (http://www.humboldtcreamery.com/milkpowder.html), but only available by the 55 lb bag at about $6.75 lb plus freight from California. Their nonfat at $5.05/lb also stands out. I've recently been making some side by side batches of whole-fat and non-fat milk chocolate. There is a definite difference in taste, but if it's coming out too dark I'd guess it probably has more to do with the amount of milk powder you are using, and if it is coming out not creamy enough, you might need to add more cocoa butter. Good luck! Edit: I had originally mentioned the manufacturer of the Nido brand, but it was edited out by the forum software. It was a cute paraphrase, but looked odd so I removed it. Perhaps the replacement could be marked in some way to make it clear that it is an automatic edit?

Most organic food stores sell whole milk powder in their bulk food section. I too had trouble finding it at first.
I also agree that your milk chocolate is using too much liquor/nibs if it's too dark. Try the following percentages BY WEIGHT for a nice creamy, yet flavourful milk chocolate:
20% nibs/liquor 20% milk powder (I use 50% whole milk powder & 50% skim milk powder) 20% cocoa butter 39% sugar 0.5% lecithin (important to increase the fluidity of the product, otherwise it will be VERY thick) 0.5% vanilla bean (use the whole bean, just chop it up fine first).

I actually found that the goats milk chocolate is good instead whole milk powder. Chocolate alchemy's site is now selling goats milk chocolate.
