So Im getting ready to make my very first batch. Suggestions on first beans to try? I am thinking about the grab bag offered through chocolate alchemy, but hesitate only because if I want to sleuth out flavor notes and compare to others' reports it may be hard with the grab bag. Ideas?

there's so much variability in the small batches of beans no matter where you get them from - i wouldn't spend an inordinate amount of time trying to decipher that. just pick one and run with it

When I first made a batch of chocolate, I just bought a kilo of criollo beans off of Ebay. The seller didn't specify origin, just that they were criollo and organic, but they did the job for a first try before I got into buying specific variety bulk buys of beans.
