Jamescary, thank you! Most interesting. Most heartwarming to see someone who really cares about the product of his work. I looked up Michel Cluizel and read his web page too. Also interesting and touching. Makes my efforts pale - but I shall continue to see what I can do to make a presentable chocolate. As so many are finding our efforts may need a lot more work but the chocolate gives a run to the stuff on the candy counter and even some of the boutiques. Onward!

I think there's no comparison. What we do is on a different scale using different machines, so our product will be different. But the beauty of what we do is that we can. It can be tailored to what we like to taste and that it has a freshness to it. Yesterday, we (we? my girlfriend did most of it made a batch of cookies from scratch and there's a very satisfying taste to it over the store bought version. What I like is Art is trying to change the rules a little (at his scale of production), as you noticed. It is heartwarming.
