I am planning to temper for the first time tomorrow. I have my first batch refining in my spectra as we speak. I have a Chocovision Rev2 set up for tomorrow am to temper my dark chocolate My question is what I would use for seed. Would I buy some higher quality chocolate bars to start then just save some of my own for future.
Also, I only have limited molds. How do I deal with the tempered chocolate while I let the molded chocolate cool? Can I keep the Rev2 running to hold it? thanks

Probably the best thing to do is press the dark chocolate button, then choose mode 2 when the time is right, and manually drop the temperature by 1 degree extra (not everyone does this, but it's what works for me). Don't add seed, when it starts beeping at you just press the button to turn the sound off, then wait. In theory, when it then beeps "ready" it will be ready, but you may need to wait a little longer, 5-15 mins.
This all depends on the bean and cocoa butter used of course, you may need to experiment with times and temperatures.

Basically, you're suggesting that you just skip adding the seed chocolate and it will still be tempered?

By taking the chocolate to a cooler temperature, yes, you can skip the seed chocolate. I do this when working on test batches or with new beans, as I don't have any seed available.
Temper mode 2 cools the chocolate to a lower temperature. I think it's about 85, so it needs to go a little cooler still, which is why lyndon is suggesting setting the temperature down a degree. When I do this in my x3210 I usually go a couple degrees lower. Also, as lyndon says, I have to wait a little while after the machine thinks it's ready before the chocolate is actually in temper.
One thing to note is that lowering the cooling temp also lowers the final temp, so you may need to reset it higher after the machine says it's ready.
