HELP, I haven't made a batch in quite awhile, I decided today was the day so up early and got everything done and in the grinder. Cleaned up and sitting here thinking how happy everyone is going to be Tuesday when I bring it to work when it hits me, I DIDN'T ROAST MY NIBS. Much, much too late. I've read where I can put just a pinch of salt in there and conch it longer might help but is this batch ruined? It's a 6 pound batch and I know it's not very big for most of you but I only make for friends and family so it's pretty big for me. Any help would be appreciated. Thanks in advance, Diane

Well, you've just made your first batch of raw chocolate...
I personally am not in favor of raw chocolate, especially since there's no way to assure food safety, but if you heated your chocolate up to say 150F you could kill off most pathogens (and taking the chocolate much higher than any "raw" standards accept haha).
How it's going to taste is another matter entirely, my bet is on a lovely "dirty feet" bouquet with a hint of humid basement and perhaps some nice notes of white vinegar.

its going to slowly cook anyways in the grinder, place a hot heat gun onto it as its grinding. it might help
