I was planning on making some dark chocolate today and before I roast the beans was wondering what I'm going to do with the Melanger while I'm sleeping. If I run it for around 5 hours before going to bed can I turn it off and then start again in the morning? Obviously it will cool considerably so will it warm up by itself when I start it again or will leaving it off for that long ruin it?
I know you shouldn't run the machine continuously for 8 hours unattended so what do you do?

Hi Max I am pretty sure everyone leaves it going continuously, that' what I do. I have left it going for 3 days and no problems and generally run the same grinder you have for 30hours at a time and my house hasn't burnt down yet.

I run my grinder in a plastic storage tote, just in case it leaks. Although I have never had an issue yet. I would not use a tall tote as I think it will contain too much heat.

I've been using the Premier Wonder Grinder for a long time now and have never had a problem with the machines running over night. I usually let my melangeur run all night but there are times when I prefer not to. My process is to turn it off (temp is usually about 120*) and put a nice heavy blanket around it, then put a large plastic bin over the whole works. This keeps it warm enough that the chocolate doesn't solidify and I can start it up again in the morning.

Hi, it's Erin again.
I wanted to let you know that the new Chocolate Refiners (available at http://indichocolate.com) now has an excessive heat shut off switch. This means that if you were running the machine and it gets to hot, the switch will turn off the motor. We've listened to comments like this one here and improved the machine based on concerns like this.
