Ok so I bought a "Chocolate Melter" online, the seller assured me he used it dry no problem. Once I got it I realized it is most definitely a Bain Marie and using it dry would burn out the element and scorch the chocolate.
I'd prefer not to use water around my chocolate so I am thinking of putting an oil in the Bain Marie instead of water. No evaporation and if some oil does happen into the chocolate , providing its a small amount, it won't ruin the chocolate.
Odor could be a problem so I want to ask has anyone tried this ? What type of oil would anyone suggest? It has to be cheap.

Most people I think use water with the Bain Marie. I would use water. The amount that may get close or in your chocolate should not be that much.
