Which is the better book: Geerts' Belgian Chocolates or Wybauw's Fine Chocolates. They seem to be priced about the same.

Geert's is your choice if you are after a large collection of classic belgian chocolate recipes. Wybauw is your man if you are after more theory. Wybauw can be had more reasonably on Amazon these days.

For what its worth, I preferred Wybauw's book as it covers a lot of aspects of chocolate making but I like the Geerts book as well just for all the recipes it has. Both books have excellent pictures and I don't think you would be disappointed with either.
