Hey All,
I'm curious what the maximum amount of chocolate the Spectra 11 can refine without getting sloppy-messy-everywhere? The manual says 8 lbs. John mentioned "about 9 lbs" on the C.A. website. Have any of you maxed out the Spectra 11 drum and if so, how much chocolate did you manage to cleanly make?

I would agree with John on 9 pounds which is what I have been running. I attempted 10 pounds the other week and after 24 hours there were still a few nibs floating around the bowl. I ended up having to split the batch to finish the job.

Thanks Adam! Getting feedback/info from multiple sources helps. I'll stick with 9 lbs then and not try to push it to 10.

I'm very new and have only run two batches, but I'm pleased to hear it goes as high as nine successfully. I've run a two and a four so far, maybe work my way up with a six-pound batch next, ease my way toward the big nine-pound run.

Running my first 9 lb batch right now Randy. Prior to that I've ran at most 5 lbs. That one, I ran for 26 hours with great results and awesome texture. For a 2 lb batch, I had good texture around 12 hours of refining. I'm really uncertain if I can simply do a linear time extrapolation for 9 lbs. If that were the case, I'd probably want to run my 9 lbs for around 45 - 54 hrs. Hmmm...I'm at hour 32 right now. I think I'll run it for 41 hrs and possibly stop there. Wish me luck!!
