Hi, All, Am a total beginner, so learning as I go. I bought a batch of cocoa beans from a distributor and did a crude cut test on them. I would really like an opinion as to the quality of the beans. As in, are they properly fermented or not. Can't miss the buggy ones and the very obvious under-fermented ones, but just wondering about the different colours, too. Have worked off pictures found online but that can only tell me so much. I am attaching a picture of the test. 42 beans in total lain out side by side . Attachments:
