Just wondering if there is a standard, or what people are doing when expressing the cocoa percentage in their chocolate.
Do I include the added cocoa butter as cocoa percentage?
70% Beans, 5% Cocoa Butter, 25% Sugar = a 70% or 75% bar?

Cocoa percentage is a calculation of cocoa beans + cocoa butter + cocoa powder
So, in answer to your post above yours would be 75%

Under European law we declare cocoa solids - that can be powder, butter or liquor. Within that we can have up to 5% of the total weight of non cocoa vegetable oils - although a query has been raised because of the exclusion of coconut oil/butter. A full list of the EU regulations should be available under the labelling laws for your country, where they define the solids to be declared and list the oils you can use.
