hello how are u i produce compound chocolate and i have pb with drops and chips this is my formulation i use
sugar 49% cocoa powder 5% fats 35 % skimmed milk 5% whey powder 5% lecithin 0.4% pgpr 0.15%
temprature of working is 35°-37
but it come liquid and i havn't dops and chips as like all big line please help me
