If you are just starting and can not justify to buy the Chocovision or AMC tempering machine, you can buy this $25 Wilton Chocolate Pro Electric Melting Pot. When I first start making chocolate, I use this. This pot is useful as it has a melt temperature and a warm temperature. To me, the warm temperature is a bit too hot, about 110 - 120 F and the melt temp is about 130 F. So usually I set the pot to warm then melt it. Once it's fully melt, I remove the pot and then seed the chocolate. Once it hit 85 - 90 F, then I start molding. If you keep the electric ON in warm temp, then when your chocolate temp starts dropping to low 80s, you can put the pot back and then wait for a few minute while stirring. It will bring its temp back up to low 90F, and you can start molding again.
