Hi
I dont have a Santha but I have ordered a new Ultra Grind and figure this will apply equally to both grinders.
Any suggestions for breaking in a new grinder? I don't want to ruin a batch of beans getting the machine run in.
I am thinking of grinding some rice and water or lentils. Just to knock of any rough edges on the stones, so it doesnt end up ruining my first batch of chic.
Any ideas?

I don't know if this is the correct answer, but I ran neutral flavoured vegetable oil through mine a couple of times before making chocolate - a lot of stone grit came out in the oil the first time, but the oil was relatively clean the second time around. Your idea of rice or lentils might be a good to give some resistance to the stones.

If I remember correctly the Santha instructions mentioned grinding sugar for 2+ hours to break it in. Then wash it out with soap and warm water.
