My partner and I, though we have successfully made and sold some of our bean to bar chocolate, have decided to switch gears and buy couverture chocolate and focus more on creating some really great flavor combinations in bars of chocolate from others. Does anyone have a suggestion for a really great chocolate that we can buy in large quantities for a good price, or at least a website that sells couvertures that we can look at?

Thanks cheebs. Since I posted this I stumbled across chocosphere and placed an order with them. Does anyone have any critiques about Guittard's chocolate to provide?

That's a little bit like asking me if girls are cute. Depends on the girl, and depends on one's personal preferences. Guittard makes some chocolate that's very good, and some that i don't think is very good. I'm quite certain that not everyone would agree with my preferences regarding what's good and what isn't. Best thing to do is order some and taste them for yourself. In my general opinion, Guittard makes a quality product, and has folks who are skilled artisans (can make things look pretty), but doesn't have great depth of technical knowledge.
