After a recent tour of a cacao farm in Hawaii, I decided I wanted to try making chocolate. Seems there's a lot to it And a lot of equipment to buy... I have a first question tho. I like eating 100% chocolate. Do I simply leave out the sugar in this recipe: www.chocolatealchemy.com/recipes_ChocolateA.php ? I see I have a lot of reading to do If someone can suggest where to start...

when you start to blend/grind cocoa beans with a little heat the cocoa butter starts to extract out

Ok, now I'm confused - I assumed "blend your beans" meant to use beans from several different sources... but based on the last comment, maybe it means something else? Can you elaborate?
