I received my spectra 11 last week, and refined my first batch of chocolate problem free. During the second batch one wheel seized. The cocoa liquor and cocoa butter were both pre melted, with the powdered whole milk added to the cocoa butter and liquefied before I put it into the grinder. The stevia and other sweetener was negligible. It was about 2 lbs total. When I disassembled the unit to un seize the wheel, clean it, dry it and start over, I noticed fairly large pits in the inside of the wheel bushings. Chocolate was caked in the holes and burned hard from the friction. I tried again, and after an hour or so, it happened again. It was difficult removing the wheel, and I'm afraid to try again. It takes pretty much time to clean and dry, and I'm getting a little frustrated. Could it be something I'm doing wrong. I work with chocolate daily. Thanks.
