Sorry if this already mentioned. I can't find it. I found the sorting here chocolatetalk.proboards.com/index.cgi?action=display&board=cocoa&thread=649&page=1#5508Does the cleaning the beans same as sorting? I read somewhere that the beans need to be cleaned. My understanding is that cleaning = washing. If I washed the beans then roasting, will washing affect the time of roasting? I currently sorted by hand before roasting. By the way, some beans are already opened/cracked and exposed the nibs. Should I toss out these before roast? Thanks for any help and info.

Cleaning can mean many things: 1) As most beans are sourced wet in the field, they can contain various levels of broken pod, placental material, immature material, diseased materials, sticks, rocks, shoes, bullets - whatever. You normally want to remove that type of material before fermentation 2) however, some of it does go through fermentation and drying, and ends up with the dry beans at the end user. as most of that non-cocoa material doesn't taste very good and tends to destroy equipment, you want to remove it as well. 3) it can also mean the winnowing step, where you're separating the shell from the nib 4) in a few rare cases, it can refer to the washing of pulp away from the unfermented bean. it's not terribly common. i would not recommend you do it to your dry beans.

Hi Sebastian, I wasn't sure how to "clean" the beans, but I sorted them before roasting anyway. Just want to be sure I didn't miss the steps. Thanks for your input. Off to experiment with more beans Noi

hi guys , Am having issues sorting out my nibs especially the small stick like stuff that remains however much you win it is it called buds?i try to pass it through a sorting tray but becouse some are long they donot go thru i end up loosing my nibs . my question is do they affect the flavour?or does any body have any soulution toddo this please help
