Hi, I am now experiencing a new problem with my temper and I was wondering if anyone can help me figure out the solution. I am tempering trays of bars. I am depositing a little more than the cell can hold and then quickly scraping off the excess with a stainless blade. The result is inconsistent. In one tray of bars I will see streaks of sugar bloom (I think) that sort of mimics the motion of my scraping. The issue is that it only happens on some of the cells in the mold. I have tried warming the scraping blade, keeping it super clean, I used a plastic blade instead of a stainless one. I rattle the mold sheet on a vibrating table after I scrape and still, some of my bars come out with a few distinctive, directional streaks of bloom. The rest of the bar looks good. If I am doing 15 trays, the bloom seems to be evenly distributed among the trays without regard to the order in which they were molded.
Any ideas?

ps: I am not using emulsifiers or added cb.
What should the ideal humidity be in my cooling fridge? I am cooling at 52F-55F for a few-20 minutes. The bloom shows up pretty quickly.

Why scrape at all? I use pretty exact doses (either with a syringe or the Savage dosing pump) and never scrape the molds, just fill, vibrate and cool. Perfect results pretty much every time. Might you also be experiencing some unfavorable weather conditions? Is your work room temp/humidity controlled?

I've used a syringe. Still use it on occasion for tempering another batch or molding bunnies. Cut the tip off to get a larger opening. And don't leave it with tempered chocolate in it.
