I can't get fluid lecithin. I have only been able to obtain powdered from one source in a large tub. Any tips on how best to use it with truffles? Thanks

Help me understand what you hope to accomplish by using powered lecithin in truffles...do you want it in the ganache? in the coverature? what are you after?

I can only obtain granulated lecithin in Ireland and even then it is practically unheard of. I know very little about it. Can someone shed some light on the best way to use it? Thanks
