Thanks for the tip on Bead Bath and Beyond.
I will look into the Turbo Tempering. I do not have a microwave, Jhoff, so can I just use a stove top?

I think you'd be better off using a warm oven than a stove top - it would get the chocolate at the bottom of the pan too hot I think?

The 3rd batch worked out well without any sticking, as I periodically aimed a hair dryer towards the outsides of the tank during the conch, so it could have been a lack of heat that was causing a problem before.
