There is no average, as supply chains vary wildly...it's very product and logistics dependent, even customer dependent.

I recently tried a chocolate that I made 9 months ago, it was the Nicaragua that the alchemist was selling at that time. The citrus flavors were intense like lime juice. I just pulled those bars out to try again and it is totally different. Flavors are tobacco, leather, and earth with banana on the finish, with just a hint of the citrus that was there before. From my experience, there's definitely something to aging.
