Does anyone know where to buy a commercial roaster- capable of doing a small batches (150-300Ib) of beans, also a chocolate melangeur- even if they are second hand. Finally I have been searching online for a cocoa press (cocoa liquor to butter and powder) but cannot find them, does anyone know a company that manufactures small scale factory presses. Don't waste your money on a commercial roaster for small batches of beans. A convection oven and perforated trays or screens works just fine.

Please don't take offence to this.
I'll provide you with a lot of information on chocolate making, but I'm not going to hand feed you and every potential competitor to me viewing this forum all of the information I've worked very hard to gather over the years.
You still need to do some work yourself.

Laba; I took an online look at their site. This one may be more suitable: www.toper.com/default.asp?L=EN&mid=174&pid=173&cat_id=173&urun_id=57They say it's specifically for nuts and seeds, and there is more control over the temperature. Maybe you could send them an inquiry into price, and share with us whether or not any of their customers in the past have used it to roast cocoa, and what the price of that machine actually is?
