Cool. I will play around with it. There was another attachment that came with the melanger (the premier grinder) it is an atta kneader. I wonder if I take the stones out and use that to stir it/agitate it if that would work? I am going to try it. Thanks!

Did you try it? How did it work out? Ben, I actually have not gotten to it yet. I have been playing more with grinding time and others that I have not experimented with the kneader. I have found something interesting though. I let the chocolate grind for a number of hours and tasted it at different increments. I noticed that it was really bright after like 24/48 but not super creamy, so I let it go longer and it started to loose its brightness, if that makes sense, yet was really creamy around the 72 hour mark, yet it lost a bit of its flavor which was a bummer, I want that bright flavor WITH the creaminess. Well I let it go even longer and all of the sudden more flavors started to pick up again.

You can also notice a difference in the bright flavors when you modify how long you keep the lid on/off the lid. It's fun to play with an compare and contrast those flavors.
