Yeah, reading labels introduced me into all the other names of sugar like Maltodextrin, which you know is very high on the GI... It doesn't sound like a sugar, though.
I can't find any Organic Allulose, so that's out since I do have Organic Erythritol and Xylitol. I have Real Monkfruit, and it is one of those things people tolerate or hate like Real Stevia.
Can I get your barely milk recipe?

Yesterday I made a batch of 70% with Erythritol as the sweetener because it is good for the teeth as it doesn't feed the bad bacteria like Strep Mutans. I added ground Coffee to the mix and put it into molds.
Well, I had a whole bar, 2 ounces, and about an hour later, this was the conversation...
Guts... "What did you eat"?
Me... "Chocolate"
Guts... "We know Chocolate, we are familiar, and we recognize Coffee as well. Both have VIP parking spaces and Coffee is our CEO. I will ask again, what did you eat"?
Me... "Chocolate with Erythritol".
Guts... "So, you think combining Erythritol with Coffee and Chocolate was a good idea"?
Me... "Sure".
Guts... "Didn't think of running that by our Board of Directors, kind of an ask for forgiveness instead of permission thing"?
Me... "Yep".
Guts... "Well, since we will pay for your mistake, so will you. We hope you didn't make any plans tonight, but we really hope you did".
So, basically I nailed the recipe for 17 (2 ounce) bars of a potent laxative with a residual Fart Fan runtime of 20 minutes.

😆😂😱😆 I'm making a batch today - still tinkering with the balance. This is: 18 oz of Uganda Semuliki Nibs; 16 oz natural Cocoa Butter; 13 oz Allulose; 7 oz Erythritol; 6 oz Whole Milk Powder; 2 oz Heavy Cream Powder. I've been thinking about adding coffee or cinnamon but want to get the base "right" first.
How was the viscosity on your 70%? I've been increasing the Cocoa Butter a bit to see if I can get it to flow a little more. In Brad Churchill's tempering video, his chocolate is much more fluid than mine!

Thanks. I'll try your recipe once I figure out my sweetener. The Allulose doesn't make you "homebound"? Mine seems to flow fine, but I don't have enough experience to know exactly how it should look. It seemed the same whether I used 50g or 100g.
I have been thinking of doing a batch of 80% with Dried Mango as the only sweetener, but will have to research. Cinnamon sounds real good.

I have no problem with allulose - except the cost! That's why the erythritol blend. Thinking back to your earlier post, I'm not sure you'll be able to find organic allulose - at least without paying a fortune for it. While it occurs naturally, it is a rare sugar. My understanding is that the way it is produced at this point is what gets the price down to where it is - very expensive! I get mine through Amazon; Keystone Pantry and Hoosier Hill Farms are the two main suppliers and usually have the best price. I may try Keystone Pantry directly as they aren't that far from me. The last batch came out pretty well. But I think I'll adjust it a touch more. I'm going to aim for a 64 ounce batch size with a 2:1 allulose-erythritol blend. In order to keep it in the "milk chocolate" range I'll have to re-balance the recipe. That's for another day!

Yeah, the only Organic version I can find is on Google for a 55 Lb bag! I would have to have a Lab test for that and I have never heard of the seller, but it comes out to under $7 a Lb, which is half what others charge for Non-GMO versions. (Before shipping). I don't see myself ever going down that road, even if I found out I liked it.
Since you're local to Keystone, you might be able to show up there and get a lab test, maybe even direct discounts if you buy in bulk.

The $7 is what I'm seeing at Keystone Pantry/Lang's Chocolate. It's farther than it looked on the map! About 3 hours each way. So I'd have to add shipping. It's a 40 pound box, non-GMO. (They do have discounts if you buy pallet quantities! Cheers!

That shipping cost would probably be half the cost of the Allulose. I wish I could find some to try locally, but I like the taste of Xylitol. I will have to do a small stovetop batch to figure out how much, though. My second attempt eating my batch of Erythritol didn't cause any distress, so I have no idea what's going on there. I don't like the taste that much though.

I think I read somewhere that xylitol is stronger than erythritol or allulose at about 90% as sweet as sugar (compared to 70% for erythritol or allulose). So if you thought the dark 70% you made was too sweet.... Anyway, if you have pets, xylitol is toxic to them! Good luck with the mix and let me know how it turns out (I have a little xylitol that I need to use up!)

Xylitol is stronger than Erythritol according to my taste buds just now.
I made a small stovetop batch with Coconut Oil, Cacao powder, Peanut Butter Powder, Milk and about 1/4 cup Xylitol. It turned out good, and I can't really taste the Xylitol. When doing a full batch, I'll start out 85/5/10 or something like that.
Thanks for the pet warning. It's on the bag, but in tiny lettering that anyone could miss. That being said, Theombrine is toxic to Cats and Dogs, so I am very diligent and careful.
