I'm wondering about buying a cheap one, just to see what happens when the 100C sensor is fried, or to see if it's possible to remove it and replace it with something else. I did contact the meat people to ask what happens in that situation, but it was like drawing water form a stone to get an answer from them so I gave up.

Even if you found a probe that didn't fry at cacao temps, I wonder how accurate it would be. If it was just thrown in with the beans, it would be tumbling around in and out of the mass of beans and the hot air, instead of just stuck in the mass of beans. My guess is that it would register a higher temperature than a probe stuck in the beans.
