A trick I found helpful is to place the melangeur wheel assembly on a sturdy cooling rack over the pan I'm pouring the finished chocolate into. I can then turn the wheels against the rack and scrape the rest into the pan.

That's a great, simple, and low cost idea for scraping off the rollers. Thanks for sharing that! Can't wait to try that out for my next batch.

Yeah, that's pretty genius. You could also do it right over the melanger bowl, like the cocoatown tool I linked earlier. That would avoid the need to move the wheel assembly while they're still dripping with chocolate.
