Hi
I just realsised that the Alchemist was selling the new Spectra 11. What I really wanted to know though was what is the difference between the Spectra 10 and the Spectra 11? Is it just a bigger capacity or something more complicated.

I'm interested in how they made the drum leak proof. Did they get rid of the center bearings assembly?

Brilliant! I've been wanting to take chocolate grinding to the next level, but had nowhere left to go on the Spectra 10. I can't wait to crank the new model up to 11 and see what she can do. You know, to get that extra push.

I've been playing with the new Spectra 11 for the last month.
I have pictures taken and will be putting up the new review page tomorrow if all goes right.
In general, the Spectra 11 has 'fixed' the leaking bearing problem, and separation of the shaft from the bowl in the very simplest manner - they have been eliminated.
More to follow.
Also, I've yet to take it totally apart, but I don't seem a simple way to convert the Spectra 10 to a Spectra 11. But I will check into it.

John, Have the Inno guys sent you the ECGC-12 yet? According to some very scant information this is supposed to be a ~12lb gear-driven melangeur?

Thanks for the update, John. Looking forward to seeing the pics and review. It would have been sweet to swap the new drum in on the spectra 10, but oh well. Guess I'll keep my box of replacement bearings handy.

The cocoa town guys were at FCIA in SF earlier this year and had a ECGC-12 on display there. From what I can remember:
* was the same bowl and rollers as the ultra, but with a stainless steel body and gearbox instead of belt * they made it primarily because they wanted to demo their larger machines and couldn't travel with them, so this is a scaled down version * they were thinking of charging $900 if I remember correctly * not clear if it is much better than the ultra, probably will have its own quirks. With that said, it was incredibly cute -- sort of a mini-melanger, so if you have a store with melangers on display, that may be an option. May also be more likely to pass health inspections where that is sometimes an issue (e.g. california)

Talked to Santha USA last week to inquire about retrofitting our fleet of Santha 10s w/ non-leaking drums from the Spectra 11. They said it may be possible and are doing some tests to see how well a retro-fit performs.
My guess is that it would require a new flywheel and up. I'm hoping to reuse the rollers and drum (aside from the centerpiece), but the Santha guy said that an all new drum and roller assembly would be required. I'll report back when I hear more.

Still no final answer from Santha USA on whether they'll sell parts to retro-fit the Spectra10 and turn it up to 11. But they say they're working on it and will let me know in a couple of weeks.

I have 2 santha spectra 11 machines and just burned up the second one, with the fan melting into the motor. The first unit also burned up with small batches of chocolate.
Does anyone know what I can do to replace the motor, what type of motor, HP, RPM, etc. Or if you can tell me the exact motor to go and purchase. I would also be interested in getting a thermal overload circuit built in??
THe spectra 11 is only about 6 months old, and Santha USA has not responded to email or phone for the past 4 months.

Aloha from Hawaii! I have gone through 5 Spectra 10 bowls myself. bearings go ;spindle and delfin rings wear out. I purchased a spectra 11 and hooked up to a commercial motor with a separate speed controller. Tired of the motors that Santha puts on these machines. Actually I had the motor and controller hooked up to the spectra 10. In order to use the 11 bowl ,I had to switch pulleys on the base. The holes on the pulleys match the base of the 10 or 11. The pulley on the 11 is smaller in diameter than the 10, so I needed a smaller belt. It runs great and as long as the bowls last I'm happy.The smartest thing I ever did to this process was fiting a commercial motor on the spectra with a speed controller. Grainger or other catalog places have them. The speed controller is a KBMA AC motor speed controller. Just hook up the speed controller to motor{1\3 horse is fine] and adapt the the motor to fit on the santha motor mounts.Aloha Sharkman
