My premier chocolate refiner has been awesome - perfect for my purposes and it's on it's 3rd year. I probably use it less than 10 times a year.
Lately I've been making milk chocolate from cacao liquor, cocoa butter (both from CocoaSupply), sugar and whole milk powder. In general this comes out great. This is definitely the easy, cheap and lazy way to make homemade milk chocolate LOL!
I noticed today that both wheels are only doing half a rotation per a cycle of the melanger bowl. After cleaning the machine I checked the stone platter at the bottom of the bowl and there are three smooth tacks where the wheels contact the stone. I'm guessing this is probably operator error on my part - I was getting into the habit of cranking the tension knob down about half way through melanging.
Do any of you have any thoughts on this? Maybe there's a way I can recondition the stone and increase the friction of the stone platter? Would something like scotch bright pads or another abrasive work for this? I could also try a wire wheel on my rotary tool so long as I can protect the resin seam holding the bowl together...
Thanks for any help, insights or thoughts on this. I guess I'll also have to accept any admonishments for improper use of my machine as well!

When cleaning, do you remove the wheels to clean the axles and holes in the wheels? I don't think it slipping due to the stones.

You might be on to something there - yeah I don't tend to remove the stone wheels from the axle - I'll give it a good cleaning tonight which might reveal the source of the problem.
