Hi there to everyone!
It's nice to become a part of this forum and start to explore something new. My name is Nauris and I'm currently working in speciality coffee industry. As a part of company I'm working for, we have coffee shops and we are making cacao there. That's the reason I turned to cacao and started to explore it, because we came along an issue. We were working with "Mork" based in UK, London and buying hot chocolate powder from them. Because of Brexit, we are not able to buy from them anymore, cuz we are from EU.
So now to the main part, I decided to try making our own hot chocolate base for milk based drinks in cafe. Is here anyone who could give me an idea how is it made? I've looked through all the process of making chocolate, powder, butter, etc, but haven't really found this one.
The ideal would be to make a powder. But if it's not possible straight away and is not so easy, I would like to start with chocolate chips our liquid chocolate.
Is here anyone with experience? Is 3-4 day refining needed for making chips, if it goes into the milk?
I'll appreciate any kind of information. Thank you guys n girls!
