Hi I’m still very “new” at actually making chocolate from the bean... I am however after some debate with myself going to push myself and start making them and try to sell them.. aiming for larger bulk operations.. now I know the alchemist sells 2 winnow machines. Now my question is. The smaller of the 2 machines is that a good option to stick with for a while? To expand on that (cause I know it’s very vague) I’ve had machines in the past (like the ChocoVision rev) that you “quickly” outgrow.. is this a machine you would outgrow quickly? I already make chocolate confections it’s just something that I want to add and end up doing big bags daily.. And advice would be greatly appreciated Thanks

If you're winnowing large amounts of cacao daily, then yes, you'll outgrow the Sylph quickly.

I don't have any real recommendations from personal experience. I've been using a very of the Aether that I built myself back when John first introduced these designs. It's worked pretty well, but I've been thinking of switching. I hear great things about Packint's winnower, but it's many steps up in size and price from the Sylph. I've also heard good things about Prefix Machinery's (24 Blackbirds chocolate) winnower.
It really depends on how much chocolate you're planning to make. When you mention larger bulk operations, what quantity are you thinking? Whatever it is, it sounds to me like you're going to need something much, much larger than the sylph.

I’m currently considering the aether or the one from cocoa town... the cocoa town one takes less room... anyone had experience with that one?
