Hey! What procedure and order of steps do you recommend for making white chocolate in a melanger? Is it dependent from the size of melanger (3kg vs 35kg)? The alchemist presents in his video quite random order of adding ingredients and leaving it for some hours, while Craft Chocolate TV shows the specific order and the necessity of adding butter over hours. Any advice would be appreciated!
