Hello, I am a beginner, total newbie, and I cannot read alot, brain injury so if answers to my questions have been posted elsewhere, wonderful, I just can't go looking for them.
I am starting out. How do I start learning about chocolate? I want to bake, with couverture chocolate. How to know which to choose, when every company offers so many.
What is "single origin", grand cru, etc. What's the profiles for the different beans from different areas and why choose one over the other and so on.
In short, how does one enter the fascinating world of chocolate and working with it?

Oh, and I also want to learn to sculpt and mold chocolate, to create figures with chocolate.

ecole chocolate (ecolechocolate.com) has a great online course they have a new intake soon (starts Jan 15) i took it 2y ago. really enjoyed & learned a lot. not sculpting but starting out stuff, moulding, tempering, sourcing etc etc best of luck! K
