Hi, I've read alot of good things about Tomric's proline moulds and about Tomric in general but some people saying that these moulds isn't comparable to injection moulds and these moulds are the only ones that will make shiny chocolate bars with no release marks. Can someone give me some clarification please?
I've found a mould from Tomric's proline collection that a like and the price is really resonable but only if it will make super shiny chocolate bars.

No issues here. Most people over wash or have issues with abrasive cleaning methods that damage the molds. You can use a bit of cocoa butter on the mold if you really want a shine.

I've heard good things about the proline molds but haven't used them myself. One of the issues with the normal Tomric molds is that they have a little bit of flex to them. As the chocolate contracts the mold bends a tiny bit so the chocolate doesn't release cleanly, leaving a release mark. The proline molds are thicker, so shouldn't flex as much (or at all maybe). If they don't flex, then they should work as well as an injection mold.
The way to get shiny bars is a spotlessly clean mold, perfectly tempered chocolate, and proper cooling. With respect to Brian, my understanding is that polishing the mold with cocoa butter doesn't help and could actually reduce the shine due to the cocoa butter being out of temper.

Thanks and yeah I hear you, all of this things was what I was thinking about. I ordered the moulds, I asked them a Tomric's and they said that release marks shouldn't be a problem because of the moulds flexing. Tempering and cooling is up to me... cheers,
