Hi All
I have 4kg of unrefined cocoa butter. I have used it to make chocolate but the scent is very strong so it is interfering with the final product. I did heat it to 200c for approximately 5 minutes and that did help to reduce the scent somewhat, but does anyone know of any techniques I can utilize to eradicate the smell without having to buy some de-oderized butter ?

If you can pull a vacuum on it while heating it, that will help tremendously.

Thought you mean't a vacuum cleaner for a moment. How would a vacuum remove the scent ?

The combination of heat + vacuum results in a lower vapor pressure that facilitates the removal of unwanted volatiles. Yer just gonna have to trust me on this one
