Hi. I want to purchase a small machine that will allow me to temper without seeding. I understand that the "wheel" tipe so- called tempering machines are actually melters with agitation, no cooling system. I temper by hand at the moment but it's very time consuming and I want a machine for a small business. so, if I understand correctly, I have 2 options: a countertop machine like chocovision or minitemper, or a very expensive countinuouse tempering machine. would love to get any insights about that!

Hi Netta. The differences between various tempering machines have been discussed many times both here on the Chocolate Alchemy forums and over at The Chocolate Life (also check the TCL archive site linked from the main site). Search around and read those and let us know if you still have any specific questions afterwards.
On a side note, there are other options than the two you mentioned. For example, I use (and recommend) a Savage Bros 50 lb tempering machine that uses a water jacket to cool the chocolate.
