First i would like to say hi to all the people that will be reading my thread as well as to thank in advance to anyone that gives any help.
I am looking forward to buying a "Premier chocolate refiner LO-PRO" for making some blanched almond butters. My intention is the production of such butters for the production of almond milk (by disolving/dispersing). In order to be able to do this i would need to get the almond butter to less than 30 microns (preferably 20). My initial production would be 100 litres maximum for which i would need about 5 kg of almond butter
Given my limited experience with melangers i would like to ask you for help to choose the right equipment for this proyect. Is there a better equipment for achieving a similar quality product? I have seen that ball mills are very efficient but quite expensive as well.
Given that this is my first small business. In case that i were to need some equipment for expansion, would you reccomend me buying more melangers or just shifting to another equipment?

I don't have any experience with this, but I'd imagine a wet grinder like a premier would work well for this application. For expansion, you could easily just move up to larger versions when the time comes. Grinders that can handle 100 lbs of chocolate are readily available from Chocolate Alchemy (Santha) and DCM (through Indi Chocolate).

Thank you for answering so quickly! I have been reasearching quite a bit but cant help to have some doubt. I'll look forward to buying one then.
Another question, in order to reduce processing times what equipment would you recomend for processing the nuts into a coarse butter? i think that would also help to reduce the processing times and add less stress to the machine.
How much time do you think would be necesary to reach the 30/20 micron stage?

For pre-grinding, I'd look at a peanut-butter grinder like the old-tyme peanut butter grinder or something like this: thescalehouse.com/victoriaelectricgraingrinder.aspxBut I probably wouldn't bother with pre-grinding for this application. It will probably only save you a little grinding time in the premier, they're expensive, and they're messy.
