Hello! I have a read a number of posts on here about storing beans. I understand that dried, fermented, roasted beans, can be stored for months or even years.
I also see that the most common recommendations are a cool, dry place. It seems that moths and mold are two common issues to be aware of. It seems that heat can cause them to go bad (rancid) as the fats spoil. Co2 gas blankets seem to help with moths and such.
From what I can tell, common storage method, when the local humidity is right (less than 70%), and cool, around 55 degrees Fahrenheit, allows for the beans to stay in a breathable atmosphere and do well for a long time. Ok, great!
So, here is my question: I live in a very humid and hot environment in Florida, United States. I need long term storage of these lightly roasted beans. Main question: CAN I VACUUM SEAL AND FREEZE THEM? Or vacuum seal and refridgerate them? Will this degrade the flavor greatly? Is there anything I should be wary of?
