I am brand new to chocolate making and want to invest in a melanger. I read that prior to using the Spectra 11, the roasted nibs have to go through the juicer first. The Premier refiner (I found on Amazon) does not state that it is a wet grinder and also says it goes straight from roasted nibs to chocolate with this one machine? There is a significant price difference between the two (Premier $255 vs Spectra $500) I want to make the right investment and would appreciate some advice.

I have two Premiers and they work great. If you go with the Premier, be sure and purchase the 'Chocolate Refiner'. This one has an upgraded bearing and link belt. I bought mine from here: indichocolate.com/collections/chocolate-making-machines/products/chocolate-refiner. Both the Premier and Spectra are the same type of grinder. The Spectra has a larger capacity. I think you will be happy with either one and it just depends on how much money you want to spend. You do not have to run the nibs through a juicer first. I don't as I just did not want another piece of equipment to deal with and clean. You do need add them slowly. Also, if you search this forum, there are many post related to both grinders. Warm the bowl and wheels in an oven first is my tip for speedy introduction of nibs. I want to install some heat lamps above mine ideally.

Thank you both for the advice. After further research (and budget evaluation) I am going to purchase the Premier chocolate refiner since it seems that it will do the job I need it to do for my small batches (approx 2 lbs)

Hi bought a permier and will work for 30 min and shut off even with the samllest amount of nibs. Any suggestions?

None of these small units are very good when it comes to using nibs directly. You can also leave the stones to run free (no tension) which will help but it still not a good solution. Brian

I am in the process of designing one that works properly. (on top of the tempering machine that I have at the prototype stage right now).
It will be a game changer for the entire industry.

Brian I had the same issue with mine. I contacted customer survice (very goo btw) and they said that my machine most likely had a faulty temperature switch (a switch inside by the motor that will shut it off if it gets too hot) I had to send the motor back and they sent me a bRand new one back right away and it has been working perfectly. They paid for all the shipping also good company.

Could you take a photo of that switch, so I can see where they put it.
I bought one direct from sspremier, and it doesn't have a thermo switch, but I would like to put one in. It doesn't look difficult and I doubt the exact location matters.

I have never used the Spectra, however have heard great things about it. I have 2 premier 2L tilting grinders and I can say that they both work very well and reduce the particle size to undetectable. They also conch the chocolate effectively. I have had mine running for many days at a time. Both are 3 years old and neither have broken.

I own a Premier and have logged hundreds of hours with no problems. I don't recommend heating the bowl or stones in the oven though, as it's too easy to damage the epoxy bonds. Use a hair dryer instead, and keep the temps under 150 degrees f. Also, preheat your mind and sugar in the oven, and it should work just as well as heating the bowl.

Concerning the issue with the temperature switch, in june one of the persons in charge of Indi Chocolate (the manufacturer of the Premier) told me that they " were switching from a manual reset for the excessive heat override switch (which has been cumbersome for our customers) to an auto reset switch that is much easier to use". I highly recommend the Premier, but for those interested be sure to buy the one with the red color (the Premier Chocolate Refiner), there is another blue one which is an older model and not that durable.
