Hey All, I have been making and selling small batches of dark chocolate quite successfully. Suddenly the bars are coming out defective. Can anyone tell me what they think has gone wrong here? I use poly carbonate molds. I table the chocolate on glass board.

To me it looks like you might have cooled the chocolate down too quickly?
